Why do evangelicals or protestants deny that the catholic church compiled the books of the Bible?

and they say those books specially the new testament were compiled by christians before the formation of the catholic church, as far as I know the catholic church before the separation of many catholic churches, the catholic church was one and many accepted the same canon for the NT, so the protestants accepted the same canon for the NT from the catholic church? now reading the history of the christianity by them, they reject anything of the catholic church in the compilation of the Bible why?
