What are some good books on theology?

From either a religious or an atheistic perspective. Bonus points if you can suggest books written by pagans, Muslims, or Jews. I'm interested in all aspects of theology, so it can be about creation, the historicity of Jesus, how the Bible got written and compiled, archaeological evidence that corresponds to or conflicts with the Old Testament, or whatever.
